A handful of pantry staples, a quick marinade, and a few minutes under the broiler turn plain fish into something silky, savory, and caramelized. The best part? Ingredients

1/4 cup red or white miso
1/3 cup sake
1 tablespoon soy sauce
2 tablespoons vegetable oil
1/4 cup sugar
4 cod fillets (about 6 oz each) or center-cut salmon fillets
Kosher salt and freshly ground black pepper

Instructions

  1. Whisk together the miso, sake, soy sauce, oil, and sugar until smooth.
  1. Pat the cod fillets dry and lightly season with salt and pepper. Place them in a shallow dish or resealable bag.
