This ramen isn’t just dinner—it’s a late-night miracle in a bowl. We’re taking Shin Black (the heavyweight champ of instant noodles) and loading it up with fresh veggies, silky swirled egg, and a slice of melty American cheese that turns the spicy broth into pure magic. It’s got crunch, it’s got creaminess, it’s got heat—and it’s ready in 10 minutes.
Hey, you know what else would be excellent here?
A perfect 9-minute egg. For extra protein, a bit more heft, and because honestly—it’s a traditional ramen move that never misses.
Let’s go.
Ingredients:
1 pack Shin Ramen (no substitutions)
1 slice American cheese
½ cup green cabbage, thinly sliced
½ cup broccoli florets, cut into planks for more surface area
In a saucepan, bring 2 cups of water to a boil. Add broccoli, green cabbage and red onion and cook 2 minute.
Add Ramen + Beans
Drop in the seasoning packets, and the pinto beans. Stir gently and add the noodles. Stir with chopsticks to get noodles submerged and boil for 4 minutes.
Swirl the Egg
Beat the egg in a small bowl. Take out a large Ramen bowl and pour the egg into the bottom of it.
Cheese Melt Time
Turn off the heat. Lay the slice of American cheese over the top and let it melt for 30 seconds before stirring it into the broth.
Serve It Up
Slowly add the noodles and soup into the Ramen bowl while stirring in one direction to form soft egg ribbons. Drizzle with sesame oil and then spoon on some chili crisp. Top with scallions. Enjoy and feel satisfied.
A cozy onion broth udon inspired by a bowl I used to order during my Wall Street days — now a family favorite. Sweet onions, smoky bacon, mushroom “noodles,” tender shabu-shabu beef, and a quick 국밥 twist for the leftovers.
